Try these guys - they do custom gages. However, I do not think they engineer complete systems - you would have to figure out the wiring, sensors, etc. But they could make a pretty neat display for you. It would be worth talking to them by phone, at least. They might be able to refer you to another shop that could tackle your project.
I seriously doubt if there is an off-the-shelf gage available for what you want to do. The closest I can imagine would be a small laptop pc and OBDII software....which is hardly discrete.
I personally would like to have a three way EGT/ Fuel-air mixture/ Boost (with peak hold)Gage in a tidy rectangular display. The rest of your goals are admirable, but would involve a heck of a lot of wiring, even if you can tap into existing sensor outputs to the ECU.
This Dakota Digital multi-temp gage is also kind of nifty, and I expect it is close to what you are seeking:
