You shouldn't need to replace the exhaust manifold unless it's cracked. If your going to coat the exhaust use the Jet2000 on the manifold & downpipe and sterling the rest of the way back. Sterling is the shinny stuff and will look better IMHO. Also look at a recent thread concerning the coating. Dean brings up some good points you should consider, specifically not to coat the inside of the manifold or the downpipe. Should the coating come loose you can cause damage to the turbo (manifold) or eat your new $$$$$ cat (downpipe). If you get a new Manifold you should consider getting it extrude honed. They will make the inside jewelry smooth. http://www.extrudehone.com Talk to Rick Miller, tell him Matt Toler sent you and I'm positive he will take care of you.
