I don't pretend to know a lot about it but a quick look the M4 is starts about $3k plus whatever options you want. So it's pretty expensive. You won't be able to tune it without lots of dyno time which is the right way to do it. Some people can get close on basic drivability without a dyno but you can't fine tune so the tough things like cold start and partial throttle response etc. never get sorted out. You said your car is T7 so if you lose the Trionic and you want anti-knock you'll have to figure out knock sensors. You didn't say what car it's for but being a T7 where the ecu controls a lot of other functions you'll have to figure out how to separate those, you better be crafty.
I think it's a great idea and I'd love to do it. I have a NG900 with a crappy Abbott ecu that I'd like to change but I can't get excited about taking another stab in the dark with another tuner.
A while back there were some posts regarding a Swedish Co. working on a stand alone that would work with the Saab DI and sensors, that'd sure make it easier
