of course it matters. do you think a car would have more grip if you were on 90% of the tire instead of 50% of the tire? of course it will. yes the factory engineers are quite intelligent and very skilled. but they have designed a car that will ride well, handle decent and have good tire wear.
they also have to make the handle very predictably for the average driver.
if you wanted to alter the alignment beyond what the shims will allow you can always cut the arm, shorten it and weld it back together. we do it all the time and they do not break. or you could also design your own arms with hiem joints for attachment and lots of adjustment.
