You can slice into the wire going to the solenoid on the starter. This wire gets power from the ignition switch when you go to start the car.
Just get a good 2 post toggle switch hook one side to the wire going to the solenoid and the other side of the switch to a good ground source.
Flip the switch and no power (12v) will go to the starter solinoid this should get you through tech when at the track.
I've done this on several cars as a cheap theft deterant!
