Carpet is darker than saddle tan -- kind of a warm brown, pretty close to the seat inserts. Kanter Products lists a carpet set, but it's pricey -- normally better to take an existing good piece of carpet (maybe off the kick panels, they usually don't get much wear), buy a good grade of indoor/outdoor carpet that's as close as you can get, cut out pieces using your old carpet as patterns, and have an upholstery shop finish the edges for you. But it sounds as if you don't HAVE an old carpet, so you may not have that option!
Re height/headliner: Removing the headliner wouldn't give you much more height; unlike most cars', it isn't attached to a liner or shell, just glued directly onto the fiberglass roof. If you pull down the headliner, you'll be looking at ugly glue/foam residue, so that's not much of a solution. Normally I'd say put up with it for now and when it gets too droopy, then redo it -- however, when you redo it, you'll have to scrape off all that glue residue, which is incredibly messy and you'll have to remove all your nicely-redone interior bits to keep them from getting glue goop on them... so it's probably more time-efficient to do the headliner while the rest of the interior is stripped out anyway. As for your height -- I'm 6'2" also and have learned a couple of tricks. Have you raked back the driver's seat? This gives you a bit more headroom; easy to do, just take out the screws that hold the front part of the seat shell to the tubular base (there are metal tabs bonded into the shell that attach to the base), insert spacers made from 1-inch-long mending plates to recline the seat a bit more, and bolt everything back together.
If that's not enough, you might consider having the bottom seat cushion re-stuffed with thinner material (you'll have it out anyway when you're having it reupholstered) or even having the upholsterer make it removable. I had to do that so I could wear a helmet for track days -- I leave the cushion in for normal highway driving when I want a softer seat, and take it out for the track to make more room for my helmeted head. I cemented some brown vinyl (left over from redoing my door panels) onto the fiberglass of the seat shell so it would look a bit more finished when the cushion is removed.
