I did a partial replacement of about the front 12" of one panel; that was the only section that was rusted, and I wanted to retain as much of the original metal as possible.
It was pretty difficult to match, and I didn't get a neat a job as I would have liked. But maybe your metal-forming skills are better than mine...
I'd think that if you're doing 30", it might be about as easy (and neater) to go ahead and do the whole thing, but I suppose that's an individual decision.
I think 6" overlap sounds like too much, though. No matter how carefully you sealed, I think you'd risk getting moisture trapped in the join area, and then it would start rusting again. Also, the extra welds are going to raise the risk of "embrittling" the metal, and then it would be less strong than a continuous piece, even with the extra overlap.
But I'm not an expert; this is just IMO...
