I'd be tempted to go the DOT 5 route on clutch systems. The reason is that DOT 5 is reputed to be more gentle on the hydraulics if not used very much, and a little bit "squishier". It also won't dissolve your paint if (when!) you spill it. But on a completely rebuilt clutch system, reliability after a winter or year of storage is important, and the squishiness is not as big a deal as it is on the brakes. For me, it would boil down to my confidence in the seal components to be compatible with the DOT 5 fluid. I'd do a little bit more research.
