As I mentioned, I think the Infiniti has better interior materials. The Saab's dash and console materials aren't up to class standards, but they're not bad, and in my opinion don't merit the harsh criticism they receive. The Infiniti also seems more solid, almost like an Acura. For example, it's disconcerting that the Saab's center console moves so easily under pressure. I doubt that's the case in the Infiniti, though I didn't thoroughly evaluate it.
Let's face it -- if you want a rock solid, vault-like feel, Saab is probably not your best choice. On the other hand, while my 9-5 Aero's interior seemingly lacks the solidity of German cars, it's barely loosened up at all over 110,000 miles in the Northeast. If the 9-3 can retain its integrity long-term like this, I'd be happy with it.
