We also have a 2000 9-5 and a now 19 month old child. We didn't need LATCH.
For rear facing use, the child seat had a strap that attached to the base of the front seat. The child seat was also held down well by the seatbelts in back.
We put it on either side instead of the middle so we wouldn't bump the baby on the doorframe getting it in and out of the car. I think the Saab would have good side impact protection compared to most smaller sedans, and further, a nice deep child seat would also provide excellent side protection, even if it gets knocked loose from the car belts by an impact.

After she became mobile and didn't need to be lugged in a car seat, we upgraded to a britax seat. This worked fine rear facing in the same manner, and even has a pouch to hold the extra length of tether. The seat is now forward facing and stays put real good. The britax feels a little more comfortable of a seat, for easier ride induced sleep. That can be important at times.
