You're probably okay if you're changing it yourself, since you're aware of the problem. I thought the torque was a bit higher than what Allan quoted, but not by much. To give you an idea, at 16 ft-lbs, you could use a socket without a wrench & get it tight enough. The thing to keep in mind is that the oil pan is aluminum, not steel, so the threads don't have the strength to withstand repeated fatigue cycles. If you strip the oil pan threads, you can repair it by getting an oversized self-tapping drain bolt at the auto parts store. (Be sure to clean out any debris created by new bolt.)
Another concern is stress-risers created by an over-tightened drain bolt "pinching" the pan. If over-tightening starts a crack, you probably won't know it until the next time you tighten the bolt & get a leak too big to ignore. The copper washer mitigates this somewhat, as it not only conforms to the pan but also to the bolt head. If you reuse the washer repeatedly you dimish it's ability to disperse the load. (I use mine twice, flipping it over, & then save 'em for other projects.) This is also a good reason to use washers which at least cover the area of the bolt head.
Just remember to tell other people the torque if you're having them work on your car. You don't want your drain bolt re-installed by some putz grabbing the air gun he just used to rotate your tires while waiting for your oil to drain...
