The minimum thickness is stamped on the rotor. The shop I use did mine for $12 per rotor, which is a great savings. Most auto shops have a machine shop in the back that can do this for you.
The shop will need about 1mm for grinding, so your rotors have to be at least the minimum thickness + 1mm. An easy way to determine thickness is to grab a metric wrench and just slip it onto the rotor to see how thick it is. For example, if the minimum thickness is 22mm, grab your 23mm wrench and see if it fits onto the rotor. If it doesn't fit, you are all set.
