IMHO, a realistic number for a complete restoration is going to be about $9000 to $10000. That would be a complete repaint of good quality ($4k), an engine rebuild ($2k), a tranny rebuild ($2k) , and refinishing of the interior ($2k). That's excluding labor, mind you, because that's quite a variable and I'm betting you'll have a hard time finding a place willing to take an entire car apart for anything resembling a reasonable sum. You will very likely have to do some of this work yourself, or pay a premium that will, well, kill you.
Beyond that, two weeks is simply inadequate. I've been planning the restoration of my '80 900T for months, and no matter how I cut it, I'm looking at four to six weeks. A good paint job will take a couple weeks alone, nevermind stripping the thing down to bare metal and then putting everything back together again. Personally, I just don't think it's realistic to try and restore a car you've gotta drive.
Besides, for $10k+ in restoration costs, you can find yourself a much newer car with fewer miles and probably in better condition. Special Edition '91 convertibles fetch $15k these days, and that's a bloody good place to start.
Of course, if by "complete restoration" you mean a good wax, leather cleaning, and a new top that's something totally different. But, IMHO, a complete restoration (in the traditional sense) on a daily-driven '87 is probably somewhere between impossible and a waste of resources.... YMMV... :)
