There is engine knock, and then there is timing chain rattle. It's pretty hard to diagnose sounds over the internet (Hey Scott, how about some MP3s?), but I'll try.

Timing chain rattle is just that, a rattle. High frequency, almost tinny, and pretty quick.

Engine knock is a different beast. It still has a high frequency component, but it sounds more robust, like somebody hitting a lower A-arm with a tire iron. More resonant, with no tinny sound to it.

If you're getting some timing chain rattle with a cold engine, I wouldn't sweat it. Saab engines rattle when cold. However, if you're getting engine knock, that's different. I'm not talking about the knock of pre-ignition (pinging), but the knock associated with lack of lubrication - aka 'rod knock'. Rod knock at startup is a very bad sign. It doesn't get better with time- only worse, and the prognosis is very poor.

I'm worried about the oil light staying on. It should go right off. If it were my car, I would get the oil pressure checked. Beg, borrow, or buy an oil pressure gauge, and plumb it into where the oil pressure sender is by the oil filter. I did this once - just unscrewed the oil pressure sender (not easy, requires a large socket), and screwed in an oil pressure gauge with some adapters I picked up at the autoparts store. In my case, it turned out to be a bad oil pressure sender, which happens on occasion. But if you've got a low oil pressure problem, you want to get onto it right away. The oil pressure light comes on about 7 psi, which is about as low as an engine will go with hot oil at idle. I'd expect around 30 psi cold at idle, and about 40 psi warm at 2500 rpm or so. These are just from memory; the numbers are in any decent Haynes or Bentley manual. Running at low oil pressure for any length of time will destroy the engine.

Low oil pressure can be caused by wear in the oil pump, or something as simple as a weak spring in the oil pressure relief valve. Only after you've determined that the oil pressure is OK would I play around with oil grade.
