If there are smooth contact points in the inner drivers, then I wouldn't worry about them or the tripods.
For the outer CV joints, what you're looking for are rough-ish, not smooth/polished wear points where the bearings contact the "scooped out" parts inside the joints - this is bad. But even if there is some wear, you can SWAP the joints from one side to the other. This way the joints are now on completely new surfaces. A small amount of wear is no big deal if you swap side to side. If there are large wear points, then get new joints.
It goes without saying that you want to clean the heck out of everything - kitchen clean, super clean. You'll go through a couple cans of brake clean but it's worth it for peace of mind. Use synthetic grease on the inner drivers, at least on the pasesnger side, which takes lots of exhaust heat. The grey stuff that comes with rebuild kits is fine for the outers.
Oh, the bluing: normal. The joints are hardened and appear that way from the factory.
