tED;p, You didn't say why you are opening the system (specifically) but you did say that your hoses are in bad shape. If you are replacing the hoses then just clamp a pair if vice grips or a c-clamp on the hose while you remove the caliper. Have the new hose ready, unscrew the old one (at the fender) and screw on the new one fast like a bunny while the new caliper is mounted and waiting. Then all you have to do is expell a small amount of air from that brake. That's how I do them and the loss of fluid is very small (put a pan under there). Also, don't even try to unscrew the distal end of the old hose, just chop it below the clamp. If you must take the stub off of the old caliper it's easier on the bench. Caps for metric double-flair fittings are extremely rare (I don't have any). Cheers.
