well, I'm thinking thermostat is failing shut so it's going to overheat and not allow hot water to trip the fan thermo switch. Also you jumping the fans is just cooling the already cold water in the rad...the hot stuff is prevented from circulating from under that thermostat. It's also common for the thermo switches to fail and/or the wiring around the fan relay to isolate due to age/corrosion. I would replace the 'stat first.
As an aside...don't let it get too hot...you'll do a Head Gasket. About 3/4 up the temp gauge corresponds to 210 degrees on my car with an Autometer temp gauge. ( 180 degrees is it's normal running temp). That's about the limit....if your gauge gets up further than 3/4...stop the car immediately.
