I think you should definitely start her up, and I would take it a step further; drive it a little, even if it's only a few feet forward AND in reverse.
Cars have seals and such which can dry rot, then crack and fail if they stay dry too long. Also, you just want to keep the critical parts (engine, tranny) in a condition that they have their parts lubed, which means running the car and moving it a little.
I would do that at least once a month, ideally 2x a month (which is what I do for my stored '66 Lincoln Continental).
