The trick to removing the old shock is having the proper tools: either a cutting torch (which requires some experience and talent using), or buying, renting, or borrowing a hand held grinder, preferably with a cutting blade on it. Put on a pair of gloves, a long sleeve shirt, and safety glasses (or better yet a face shield - you can rent that too), and slice through the shaft. It takes about 5 minutes per wheel, and is very satisfying work!
Then you just pull the shaft and that stubborn bolt out through the top.
Ball joints are'nt too bad either. Remove the bolt, then smack the crap out of it with a a small sledge (2-3 lb head). If it still resists, you can buy or rent a ball joint extractor (looks like a large tuning fork), that you drive through the joint to free it. It's intuitively obvious how it works, once you've seen one.
