Sunroofs are very complicated and delicate to adjust. I'd be very hesitant to take it apart. Before you get too carried away here you might try cleaning and lubricating it. Clean out the tracks and get some lubrication in there. Sunroofs very rarely get proper lubrication and cleaning. Also, there are people who don't like sunroofs and don't use them. It's possible the previous owner didn't use it. Once you get some lube in there keep working the latch. It's possible it's just gotten a little sticky and isn't releasing.
