Knock sensor should be fine since it's just a Piezoelectric coil. Have you cleaned the AIC with WD-40? Sometimes the AIC just get old, unless it ran fine as a Automatic. You did mention that pinching the small vacuum hose changes the RPM. Sounds like the AIC is working, just maladjustment. Press the A/C button to see if there is change in the RPM. With the extra load of the A/C compressor, the RPM change at the AIC valve should compensate for this. Did you happen to do anything with the timming chain?
