The threads in the head could have been damaged by the monkey who worked on the car before you. Was the plug "a little hard" to take uot when you changed them last? Over the years I've found that a small dab of aluminum based anti-sieze on the plug threds (keep it off the tip!) goes a long ways towards preventing this kind of problem.
If you decide to use a heli-coil repair kit heres an old machinist trick. Before tapping or drilling into the opening, stuff the cylinder full of bread. Yup, plain old white bread. This will keep any metal shavings right at the bottom of the hole. Use a vacume cleaner and a scribe or small diameter screwdriver to suck the bread/metal mix out. Any bread crumbs left behind won't hurt a thing.
