As stated in a previous post, I'll state up front that I am not familiar specifically with the '93 9K compressor.(It would be helpful to know what brand you have as a starting point.)
For system coolant pressure, the switch on the receiver/dryer is designed as the primary system protect device. Since the compressor sits right above the turbo, there may be some reason that a thermal protection switch was added. At this stage, the best thing that I can recommend is to go to a SAAB dealer and have them look up the part for your year and also verify that you have a stock compressor. There is not sufficient information in your posts to infer if the "red connector" is stock or it was added as an aftermarket modification.
Given that (at least some) compressors did not come with this switch, that the SAAB pressure switch takes care of coolant charge, and that by shorting across the switch you get normal operation, you might be okay to operate without it - particularly if your air conditioning professional cannot come up with an explanation for its existence. From your description it sounds like it is likely to be "just" an extra protection switch. However, personally I would take the time to visit the dealership and get the additonal information directly.
