Another up for the Blaupunkt reccomendation. I did a major overhaul on my car stereo with the heart of the unit as a Sony CDX-M770. At it's time it was top of the line and it still works beautifully today. I would recomend the blaupunkt over the sony for one reason tho. You can get that 5 disc in dash CD changer and then something else in the head unit itself (MP3 CD player, Mini-Disc, Tape) so you have two different sources.
As for speakers, just go to crutchfield and see what you can get for the best buck. Speakers can get expensive and some of them still sound worse than the stock speakers (which I think can sound very good). Money can be burned quick here so make sure you know what your going to be getting into before you start or do the project in phases.
As for an amp, it usually isn't necessary for the fronts and rear's. Head units can put out a clean 50W of power. If you need to listen to music any louder, don't come near me or any other civilized neighborhood. As for the subs, there might be some reason to go more powerful ;-).
