The plate warpage usually occurs when the electrolyte level has gotten low. The charging current is confined to less area (i.e., more amps per square centimeter)- in contact with the electrolyte - thus generating excess heat which, because there is less liquid in the cell, is confined to the metal plates. Since they are lead and soft relative to, say, iron, it doesn't take a lot to cause them to sag.
Yes, when the cells touch, it can lead to less voltage measured across the cells since they are connected in series. However, another effect is reduced electrode surface area and less electrochemical conversion during the charging process - i.e., less current delivering capability. The major effect to the car's electrical system is that the battery looks like a short to ground to the charging circuit.
Moral: Check your electrolyte level occasionally unless you have a sealed (gelled electrolyte) batery.
