The temperature reading in your dash display is from a sensor right below the radiator on driver side. I presume the air conditioner was on when the "outside" temperature reached likes it's on the planet Venus.
Try this, turn the air conditioner off, then you would see the temperature reading starts dropping to reasonable level. I have two Saab 9Ks, they both do the same thing, i.e. the temperature reading goes through the roof when the air con is on even in highway speed. In my black '92 9K, I often see 122 deg (which probably is the max reading) going through Holland tunnel on a hot day.
My theory is that when the air con is on, there is an extra cooling fan that is on all the time and that actually blows more hot air to the outside temperature sensor, hence a much higher than ambient reading.
Some people attribute the higher reading to the sensor being closer to the ground but this is only true to a small extend, the sensor is more affected by its proximity to the radiator and engine than a hot ground.
As to the mileage indicator, there are two readings, one is averaged MPG, the other is instantaneous MPG. Depending whether you have an auto or manual, the instantaneous reading may be a moving bar (for a manual as in my Aero) or a varying digital display (for an auto). You need to toggle the display by pressing the "Info" button below your clock to get to instantaneous MPG. Your comment about the MPG reading didn't change much was probably because you are reading the averaged MPG which of course doesn't change much while you are driving.
As for warning lights on that "little car", consider yourself lucky that it doesn't light up. A no fault means no light so your car tells you that she is happy. If any of your door isn't closed completely, you would see a light there. If a light bulb is burnt out, you may get a warning light there as well. However, in older cars, a warning light about light bulb may not necessary mean a bad bulb (let us know when that happens).
Your computer is OK and functioning normally as you described it.
Yes, I'm in NJ, under the same Bermuda high as everyone along the northeast. Put the car in the shade whenever you can but stay away from birdies with intend to....:-).
