There is a very noticeable difference between the smell of a heater core leak (baking bread or maple syrup) and mildew (moldy leaves and dank basements). From your description, it isn't a heater core leak; just the normal mildew buildup of vents closed all summer.
Remember, you rarely have the defrost on in the summer, so those vents are closed. They also blow right into your nose, so you smell even the smallest bit there.
First, make sure all your drains are clear. Clogged AC drains trap water. Make sure you've got no bits of leaves in the cabin intake grill. Pull the pollen filter - if it's getting dirty, replace or clean it.
I'm sure there are sprays you could use, but I wouldn't use them. Who knows how they'll affect the plastic, and you're probably just replacing one stink for another. Your best bet is to open the vents and run the fan on 2 or 3. The dry, hot air will kill any mildew and the airflow will clean out the smell in a few days.
