My 89s 5spd 212k does a similar idle drop after startup, but not enough to cause a stall. Idle is between 1000-1200 when warm. I know this is high but there are no driveability issues and since I don't spend that much time idling I don't consider it a big problem. I have cleaned my AIC, checked for vacuum leaks, etc. but have wondered if someone (prior to my owning the car) may have raised the idle to prevent the stalling you describe.
