Ari,
Most shops use these color coded torque "collars". (I don't know the real name) They have the shape of an hour glass with the neck is made to flex after a predetermined torque is reached, disallowing any further turning even if the air ratchet is still on.
I think people dismiss them as simple extentions but they are actually pretty accurate.
