The EDU uses electrical power, and has its own internal microcomputer. When you first crank an engine, the voltage drops pretty low.
When you jump a car, or if you manage to start a car on a very low battery, sometimes that startup voltage can be pretty low. When this happens, sometime that microcomputer doesn't start up properly. Every computer is designed to come out of Reset and start running its program. If it doesn't come out of reset right, it may start up in the middle of the program, and you'll get all sorts of wacky results. Since the gas and temperature gauges are driven by the EDU, they will be just as wacky.
When this is going on, none of the EDU readings are to be believed. Those times when I'm limping a weak battery along and the EDU wacks out on me at startup, I just pop the EDU fuse out for a couple of seconds once the engine is running. This power interruption allows the EDU to reset properly.
