I have run the lower temp 82-degree C thermostat in a couple of SAABs, including my current '94 9000. The temp gauge reading on mine is normally right in the middle of the white zone, at about 9:00. Your car is now about seven years old and may have the original thermostat, a part that has a known high failure rate and may be due for a change. Search the archives for procedures, note that I did not remove the throttle body to do mine, but it was tight working in there.
Many on this board recommend the 82-degree unit vs. the normal 89-degree one to promote the longevity of their cars. While there is no proof that this makes a difference, on my old 900 the lower temp thermostat dropped the gauge reading from almost in the red zone all the time to 9:00 (actually, 3:00 on that car!). And it still provides enough heat for winter in Chicago, just takes a bit longer to warm up the cabin.
If you have to investigate the coolant temp sender units, there are actually two on the 9000: one on the intake manifold that I believe goes to the engine control computer and another, which on mine is near the thermostat, for the temp gauge. You may just have an oxidized connector, not that likely, but it is a 30-second job to take off the connector and reseat it, which should clean things up a bit.
