I think I learned the best way to learn these thing. I had to. I just started reading my shop manual (regardless of how obtuse or unhelpful it is), and there is also a wonderful pair of guys in town that own a SAAB only garage. If I had a question about something that i couldn't see on my own car, more than likely they had bits of 9000's lying around.
I think it took me about two years to learn everything I know about it now, and enough for those guys to hire me on as a mechanic for a bit.
As for where, that's a tough one. as long as you have a fair amount of space around your car, that's not on a hill, and a nice set of tools (and many many torx bits), jack stands, towels, and anything else like that (which you accumulate as you go along), you can do a repair anywhere. I changed my transmission in the parking lot of my dorm (hand winch, some logs and a skateboard :) ). Like you said, having a full time job, with a steady income is a good thing.
Look for a '91 or '92 9000 Turbo. Those are probably the best build of the older body style (seeing as how they got a lot of the kinks out before they changed stuff around), and the most powerful.
As for learning, start small and work your way up. Change your own brakes, take off the rotors to be turned, bleed the brakes, change your own oil (with mobil 1 synthetic :) ) ... and so on, mainly to just get your confidence up. Then start fixing stuff as it problems present themselves.
