Are the rotors approaching their minimum thickness?

If so, just replace them. If you turn them they will probably warp before long and you'll have to replace them anyway.
If they are straight and still thick enough, just put on the new pads and be happy. As you note the pads will wear in. I do new rotors about every other pad change.
