I hate to say it, but you're obsessing. The gauge is there to let you know the car is warmed up, and to tell you if the car is overheating. Anything else is too much information.
The temp will vary strongly with engine load, airflow, and phase of the moon. How it moves around in the normal range is too much information.
For this very reason, Saab changed the way the gauge works in later years ('95 on, at least). Saab was getting so many complaints from owners about what was 'normal', they changed the software in the EDU, which drives the gauge. Basically, it adjusts the gauge reading for things like engine load, etc. So it shows a low reading - 8:00 typically, (7:30 to some eyes) under just about all conditions, and only goes up to red if the car overheats. So the car is hiding those variations.
Basically, use the gauge to know when the engine is warmed up so that you can stomp it. Use the gauge to know if you're overheating - the needle into the red. Otherwise, worry about getting hit by the SUV in the next lane and don't worry about the gauge.
