The CEL could be something major, or as simple as you didn't connect up the temperature sensor under the intake manifold. Step 1 is to read out the codes - check the Townsend site here:

Once we've got the codes, then more troubleshooting will follow.
I know you've gone through a lot of trouble getting the thermostat installed and don't want to hear this, but I wouldn't go with a 90 degree stat. Most folks go with lower thermostats, like the 82 that was in there. Going with a thermostat higher than stock isn't going to lead to a cooler running engine.
Replacing the thermostat isn't fun, but I've never had to pull the intake manifold. I take off the FPR (held on with two allens). To get to the bolts holding the thermostat housing on, I get away with a long extension, reaching under the intake manifold. I do pull off the intake (air) hose and tie it out of the way.
In earlier cars, like the '92, where the fan comes on isn't tightly coupled to the thermostat temp. The fan comes on when the radiator gets warm. That happens when air isn't flowing over it. The temperature gauge shows the temperature at the engine, not the radiator.
At a minimum, I'd put the right thermostat on order, and be ready to do a swap if you see things amiss in the cooling system.
