Well, they are just made of plastic, and as plastic ages it becomes brittle and breaks. Another common area of breakage is where the metal clips hold the cables to the assembly. I use picks to pry the clips carefully from the plastic.
My 75's temp knob busted off and I was fortunate to find a perfect replacement on ebay. I guess you can try lubing them, but I have personally never done that. Maybe also look for kinks in the cable, or binding where it connects to the heater valve and defrost vents. Try to manually operate them before hooking them back up to your good replacement. It was really a poor design, and I'm surprised they used that set-up all those years.
As far as the woodgraining, maybe you can source some contact paper. Honey oak looks to be a good match from two websites I looked at.
