I was taught to be smooth. Your clutch work shouldn't jerk the car on upshifts, and it shouldn't throw you forward on downshifts - double clutching helps here. Practice will make you so smooth, passengers won't they're in a car with a manual unless they're watching you closely.
Heel and toe allows you to brake into a corner and downshift with a blip of gas to match the revs - again double clutching makes for a smoother downshift. This permits you to be in the right gear to accelerate coming out of a corner. Shifting while still on the brake eases the weight transition of the car. Having said this, I have a hard time doing this due to the 9-3 pedals.
