The reason your car only took 1 gallon of coolant is the thermostat. It is closed when the engine is cold. Once it warms up, the car will gulp in coolant from the expansion tank. Once this happens, you need to move quickly to pour in enough additional coolant to bring it up to the proper level. If you just start driving and do not check your coolant, you will overheat the engine, since there will not be enough coolant in the system. You need to make sure you run the car for several minutes after filling up with the initial amount of coolant. Have another gallon of premixed coolant ready and WATCH THE EXPANSION TANK. Once the thermostat opens up, the level will drop in one big gulp and you need to add more right away.
I would also recommend pre-mixing antifreeze with distilled water before you pour it in. Makes it far easier to control the proportions.
