OT: DIY plumbing for basement bathroom...

Hi everyone, I'm attempting to finish my basement and DIY as much as possible, strictly for financial reasons because I'd rather be in the garage tinkering on my '86 900T. I've got a friend in the neighborhood that teaches shop class at a local tech school so I'm paying him by the hour for advice, instructions, etc. He's going to help me frame out the basement and more.
But some things I'm trying to contract out, e.g., plumbing. The basement is about 1000 sq.ft. and I need to move the drains and pipes (bathroom) by cutting up the cement floor, moving and then repouring cement. So I'm definitely contracting that out and I've got a good plumber from my above mentioned friend. But my question is about the rest of the plumbing for the bathroom.
If all of the drains and vents are in the proper place, how hard is it really to plumb up the water and drain supplies. Is anyone a plumber or DIY? The couple of quotes I've gotten are close to $3000. This is after the above mentioned cement work, but it does include all the copper piping, drain piping, sink, toilet and shower base and head. I'm not saying that it is not highly skilled labor, I'm just trying to save money where I can because I know that other things will go over budget and I'll run out of money before finishing. I figure that if the main floor drains are in the right spot how hard can it be? Just a little pipe cutting and soldering right?
So all advice welcome, I'm not looking for how to do it, just if you think that it is something that I can learn as I go or I'm I just going to regret not paying someone to do it. Of course, my wife just wants to pay someone but she doesn't realize how stubborn I can be.
