If you only rev to 5000 rpm, you won't get what your engine has to offer. (That's even true in a Saab, but the torque curve means you really do miss less).
My dad has an e30 BMW M3. If you know how to drive the engine, then you never have a problem using its power. You just have to know the engine's characteristics.
I will be interested to see what BMW does with their M cars with respect to a turbo. You have no argument from me that the "lots of torque early and often" characteristic of a turbo engine makes a much easier daily driving experience, but it doesn't make a faster car.
I've thought of getting a starter convertible myself in a few years, and a Saab would be top of the list simply because of engine choice. I'm not sure, but I think I'd like a hard-roofed e36 or e46 to do the "handling" and let the Saab do the top-down cruising!
