I would say either go w/ IC fans or the IC sprayer but not both. Or the fans plus h20 injection. W/ the fan your basically sucking water through that hasn't absorbed any of the heat, kinda of a waste. Your putting the fan through alot of abuse by doing that.
From what your saying, it sounds like your using some type of open air, oil based, air filter. If the water is being sucked up by the filter you're filter is probably absorbing alot of the water, which will end up not being too fine of a mist entering the engine and will probably displace a good amt of the oil into your engine. In the end your air filter, fan, and turbo probably won't last as long.
If you're looking for a pressure switch, use an OEM overboost switch or a cruise control boost sensor.

Also, water(4216J/kgC) has almost twice the heat capacity of methanol(2547J/kgC).
