Which is better is a good question. It IS an approved rim width, so it is not really being "made to fit".
Yes, I believe you are right with the keystone shape (which is why a 205 which is 10mm wider than a 195 only has a contact patch 5mm wider on a 5.5" rim).
I have seen no really good tests of this nor have I ever used the exact same tire in a 195/60 and a 205/55 to measure lateral Gs with my G-Tech Pro or doing any lap times. BS alert! Speculation follows.
In theory, what you say is true, the 205/55 has an undesirable section width to wheel width which might produce slightly worse handling characteristics. However, in our application, you have to also consider the performance level of the tire you can get. About the best 195/60-15 tire you can get is the Yokohama AVS ES100. In the 205/55 you can get what I believe is a better tire, the Bridgestone S-03. These are really good tires. In tire rack testing, the Bridgestone beats the Michelin Pilot Sport and the Pirelli PZero which I think makes it pretty impressive. Now, is the benefit of the better tire enough to offset the "undesireable" handling characterstics? I think so, plus I'm not convinced on the "undesireable" handling characterstics.
