The load on the alternator will be greater since it will have to run the water pump creating parasitic deag. also if the alt. shits the bed there wont be any limping home on the battery as the water pump will drain it quickly. As for the weight savings, were talking an alum pump, pretty light pulley and a section of belt, not much weight savings there. As for the rack, I drove my 89'900t around for about a year with the pump/hoses taken out and I liked it, it was hard to turn when going slow but was much more respinsive in my opinion and not that much harder to control under hard acceleration. I was runing 205/45 Khumo's on 16" aero rims. I have an EMS rack on my 99t and although I have not gotten to drive it yet it feels real nice turning on the ground.
Good luck finding one.
