With a modern, high-flow cat I would be surprised if you see any real increase in performance. I'm currently running cat-less on my '80 5-door, but to be honest it was 'cause I was too cheap to replace it... I can't say I saw any increase in performance switching the two out. Recently I went the other way - my '88 9kt had a hollow cat (by accident - it was weird) that was replaced under warranty with a good one. Didn't see any decrease in performance as a result.
In Europe, some Saabs came with cats and were rated 5-10hp above the U.S. spec ones. These cars ran open loop (no O2 sensor) and a slightly richer mixture, netting the additional 10hp. Given that no cat and more fuel only produced 10hp, I'd say that gutting a cat won't produce any truly worthwhile results... 10hp vs. acid rain? Not a tough choice, IMHO. My 5-door is getting it's cat next month... :)
