Add my voice to the other "do it from the top" votes! And I speak from experience, having removed C900/99 engine+trannies maybe 20 times.
One thing to consider in addition to what everyone else has mentioned, is that having the engine/trans out provides a "golden opportunity" to get access to some stuff that's much harder with the engine in.
One example: that steering rack that you know is going to croak 2 weeks after you do the transmission job ;^)
Also things like upper control arm bushings, alternator bushings, various coolant hoses, the list goes on. Also provides a chance to give the engine compartment a good cleaning if you're into that kind of thing, and to inspect some places for rust that are very hard to see with the drivetrain in place.
Re the soft asphalt, put some 5/8" plywood down and you should be all set.
