You won't have any issues. If the battery is decent enough, it will be fine just disconnecting it. I store my convertible for the winter as well and I don't even use a tender on the battery - just hook it up in the spring and everything is good to go. IIRC, all of my seat/mirror memory and Infotainment settings stay as well and the key will be fine.
As Roger said, don't forget the Sta-Bil though. I've never added extra air to my tires and I've been fine in that regard as well. If they flat spot a bit, they'll even out once you start driving.
