Having three 9-5 wagons spanning 2000-2009, I can’t say I have had any particular problem with parts. But some parts are no longer available and used parts are your only option. I’m sure you have that experience from driving 900s. There might be times when you can’t drive the car for a few days waiting for a part. I needed to find used parts to replace a fraying seatbelt on one and a door airbag sensor in another, for example. The usual maintenance parts are readily available. Find a car that has little rust and has been maintained and even if you need to do additional deferred maintenance you will have a good car. I can’t say I prefer the newer 9-5s to the older models so see what you can find. Bernie’s advice on mechanical aspects obviously comes from years of experience, something the average owner doesn’t have. A Tech 2 really comes in handy if you can manage that.
