A fresh working thermostat with lower heat will work fine. It is when it gets older and lazy it might set the code P0116 sooner than what a high temp thermostat would do.
Both thermostat are "suppose" to stay more or less closed until nearing their opening temp but as they age, they start to open sooner and the T7 fuel system is super sensitive for that code.
It was common knowledge to install cooler thermostat and fan switch in the classic 900 here in LA but you will find a slew of opinions about it on the 900 board, lol
