It blows off the manifold because the turbo pressurizes the manifold... that's what turbos do. That particular hose comes off and that particular grommet blows out because they're the ones in the worst shape. After you fix them, there's a good chance another one will then become the one in worst shape... that's why typically you just want to replace them all at once. Vacuum and pressure are consistent across the whole system, there isn't one circuit that gets more or less than the others.
