You SHOULD see the rings in the gap between the pistons and the cylinders. That's why the rings are there: fill the gap that must inevitably be there at the same time perfecting the seal.
The carbon deposits are normal, and can be removed with--I believe--any BRASS bristled brush. Let's put it this way, if I'm wrong, you are unlikely to do any damage to the harder steel of the cylinder.
One bit o' hard won advice on de-carboning: if that is your ONLY intent you have to be absolutely certain to remove ALL of the carbon, esp. the crubmles you make "descaling." Those little pieces are hard and nast if they rub anything (cylinder walls, caught between walls and rings) or caught between anything (valve surfaces).
If you're just pulling the head to deal with those pretty-nearly-ruined bearings you described, then take extra care NOT to even TOUCH those carbon rings, and thoroughly shop-vac the cylinders before closing up. I would even go so far as to say DO NOT MOVE THE PISTONS AT ALL COSTS, so that there's no chance of carbon-ring interaction before that shop vac-ing. (Make sure the brush or wand you use is clean)
De-carboning is a pretty standard procedure, and frequently done, but as you can imagine, if a shop was doing this head-job your doing now, they wouldn't TOUCH that carbon under the "if it ain't broke, don't fix it rule."
